To make this dish at home by prescription from the author Gomer would need: 10 whole black peppercorns, 10 whole cloves, 10 cardamom pods, 10 tsp black loose-leaf tea, 1 tsp vanilla extract , 1 cinnamon stick, 1 litre milk, 1/3 cup raw sugar , Ground nutmeg, to serve.

Ingredients:

  • 10 whole black peppercorns 
  • 10 whole cloves 
  • 10 cardamom pods 
  • 10 tsp black loose-leaf tea 
  • 1 tsp vanilla extract 
  • 1 cinnamon stick 
  • 1 litre milk 
  • 1/3 cup raw sugar 
  • Ground nutmeg, to serve 

Instructions

  1. Using a mortar and pestle, (see note) pound peppercorns, cloves and cardamom pods until lightly crushed. Place peppercorn mixture, tea, vanilla and cinnamon in a saucepan. Add 1 cup cold water. Bring to the boil over medium-high heat. Reduce heat to medium. Add milk.
  2. Simmer for 3 minutes or until aromatic. Strain mixture into a saucepan over medium-low heat. Add sugar. Cook, whisking, until mixture is frothy. Pour into glasses (see note). Sprinkle with nutmeg. Serve.
