Ingredients:

  • Juice of 1 lemon 
  • 1/2 cup caster sugar 
  • 1 mango or 2 thawed frozen mango cheeks 
  • 750ml bottle chilled sparkling wine 

Instructions

  1. Place the lemon juice and caster sugar in separate shallow dishes. Dip the rims of 6 champagne flutes first in the lemon juice, then in the sugar to coat. Puree the mango, then divide among flutes. Top with sparkling wine at a ratio of one-third puree to two-thirds wine. Serve immediately.
