Ingredients:

  • 1 cup caster sugar 
  • 4 limes, finely grated zest and juice of 1 lime, plus 3 limes, cut into small wedges 
  • 3/4 cup Campari 
  • 1 1/4 litre soda water 
  • Ice, to serve 

Instructions

  1. Combine sugar, lime juice and zest and 1 cup water in a saucepan on low heat, stirring until sugar dissolves. Bring to boil. Simmer for 5 mins, or until syrupy. Strain and refrigerate until cold.
  2. Transfer lime syrup to a large serving jug. Add extra lime wedges and muddle until limes are softened slightly. Add Campari and soda water. Half fill each serving glass with ice and top with Campari mixture.
