Coffee isnt just for after a meal - this sweet and spicy icy version is a refreshing start to your Thai feast.

To make this dish at home by prescription from the author Gomer would need: 25g instant coffee granules, 3cm-piece fresh ginger, 1 x 7cm cinnamon stick, 5 whole cloves, 1.25L boiling water , 250ml sweetened condensed milk, Crushed ice, to serve, 125ml Kahlua liqueur .

Ingredients:

  • 25g instant coffee granules 
  • 3cm-piece fresh ginger 
  • 1 x 7cm cinnamon stick 
  • 5 whole cloves 
  • 1.25L boiling water 
  • 250ml sweetened condensed milk 
  • Crushed ice, to serve 
  • 125ml Kahlua liqueur 

Instructions

  1. Place the coffee, ginger, cinnamon stick and cloves in a large heatproof jug. Stir in the water. Set aside to cool completely.
  2. Strain the coffee mixture through a fine sieve into a clean jug. Discard the ginger, cinnamon stick and cloves.
  3. Add the condensed milk to the jug and stir to combine.
  4. Fill serving glasses with ice. Top with the coffee mixture and Kahlua, if desired. Stir to combine. Serve immediately.
