Ingredients:

  • 2 cups white sugar 
  • 7 cups water 
  • 300g fresh or frozen raspberries, pureed 
  • 8 large oranges, juiced 
  • chilled mineral water 

Instructions

  1. Combine sugar and water in a large saucepan over medium heat. Cook, stirring occasionally, for 10 minutes or until water comes to the boil and sugar has dissolved. Remove from heat.
  2. Stir raspberries into warm sugar syrup. Cool to room temperature. Strain through a sieve. Discard pulp. Stir in 2 cups of juice.
  3. Place mixture into an airtight container. Freeze overnight. Use a fork to break up mixture. Place back into freezer for 1 hour.
  4. Scoop mixture into pre-chilled glasses. Pour over a little mineral water. Serve.
