To make this dish at home by prescription from the author Gomer would need: 2 lemon and ginger herbal infusion tea bags, 1 ceylon tea bag, 2 cups boiling water, 1 1/2 tbsp brown sugar, 2 cups soda water, chilled , 2 x 300ml bottles dry ginger ale, chilled, 1 stick lemongrass, trimmed, halved, 2 limes, sliced , 2 tbsp torn fresh mint leaves, 2 cups ice cubes, crushed.

Ingredients:

  • 2 lemon and ginger herbal infusion tea bags 
  • 1 ceylon tea bag 
  • 2 cups boiling water 
  • 1 1/2 tbsp brown sugar 
  • 2 cups soda water, chilled 
  • 2 x 300ml bottles dry ginger ale, chilled 
  • 1 stick lemongrass, trimmed, halved 
  • 2 limes, sliced 
  • 2 tbsp torn fresh mint leaves 
  • 2 cups ice cubes, crushed 

Instructions

  1. Place tea bags in a heatproof jug. Add boiling water. Set aside for 5 minutes to allow flavours to develop. Discard tea bags. Stir in sugar. Cool completely.
  2. Transfer tea to a large serving jug. Add soda water, ginger ale, lemongrass, lime and mint leaves. Stir gently to combine. Top with crushed ice. Serve.
