Turn blueberries into a luscious syrup to drizzle over ice-cream and desserts.

To make this dish at home by prescription from the author Gomer would need: 2 x 125g punnets blueberries, 80ml water, 60ml butterscotch schnapps, 70g caster sugar, 3 whole star anise , 2 x 7cm-long strips orange rind, 8 vanilla ice-cream slices, to serve, Almond wafers, to serve .
Ingredients:
- 2 x 125g punnets blueberries
- 80ml water
- 60ml butterscotch schnapps
- 70g caster sugar
- 3 whole star anise
- 2 x 7cm-long strips orange rind
- 8 vanilla ice-cream slices, to serve
- Almond wafers, to serve
Instructions
- Combine the blueberries, water and schnapps in a saucepan over medium-high heat. Bring to the boil. Reduce heat to medium-low and simmer for 1 minute or until the mixture reduces slightly.
- Add sugar, star anise and orange rind. Stir until sugar dissolves. Increase heat to medium-high. Bring to the boil. Reduce heat to medium-low and simmer for 5-10 minutes or until the mixture reduces and thickens slightly. Set aside to cool. Remove and discard star anise and orange rind.
- Place two ice-cream slices in each bowl and spoon over the blueberry syrup. Serve with almond wafers.
