Ingredients:

  • 2 x 125g punnets blueberries 
  • 80ml water 
  • 60ml butterscotch schnapps 
  • 70g caster sugar 
  • 3 whole star anise 
  • 2 x 7cm-long strips orange rind 
  • 8 vanilla ice-cream slices, to serve 
  • Almond wafers, to serve 

Instructions

  1. Combine the blueberries, water and schnapps in a saucepan over medium-high heat. Bring to the boil. Reduce heat to medium-low and simmer for 1 minute or until the mixture reduces slightly.
  2. Add sugar, star anise and orange rind. Stir until sugar dissolves. Increase heat to medium-high. Bring to the boil. Reduce heat to medium-low and simmer for 5-10 minutes or until the mixture reduces and thickens slightly. Set aside to cool. Remove and discard star anise and orange rind.
  3. Place two ice-cream slices in each bowl and spoon over the blueberry syrup. Serve with almond wafers.
