A new take on a classic punch with tea, mint and ginger beer.

To make this dish at home by prescription from the author Gomer would need: 2 black tea bags, 1 bunch fresh mint, 500ml boiling water, 400ml Bundaberg Rum UP, 400ml ginger beer , Lemon, Ice .

Ingredients:

  • 2 black tea bags 
  • 1 bunch fresh mint 
  • 500ml boiling water 
  • 400ml Bundaberg Rum UP 
  • 400ml ginger beer 
  • Lemon 
  • Ice 

Instructions

  1. To create the iced tea: brew tea bags and 4 sprigs of mint in a serving jug with 2 cups of boiling water, allowing to infuse for 10 minutes before removing the bags. Allow to cool, then discard the mint leaves.
  2. Add rum, ginger beer and plenty of ice.
  3. Garnish with remaining mint and lemon slices. Stir and serve.
