A new take on a classic punch with tea, mint and ginger beer.

To make this dish at home by prescription from the author Gomer would need: 2 black tea bags, 1 bunch fresh mint, 500ml boiling water, 400ml Bundaberg Rum UP, 400ml ginger beer , Lemon, Ice .
Ingredients:
- 2 black tea bags
- 1 bunch fresh mint
- 500ml boiling water
- 400ml Bundaberg Rum UP
- 400ml ginger beer
- Lemon
- Ice
Instructions
- To create the iced tea: brew tea bags and 4 sprigs of mint in a serving jug with 2 cups of boiling water, allowing to infuse for 10 minutes before removing the bags. Allow to cool, then discard the mint leaves.
- Add rum, ginger beer and plenty of ice.
- Garnish with remaining mint and lemon slices. Stir and serve.
