Honey spiced fruit compote

To make this dish at home by prescription from the author Gomer would need: 1 litre lemon, lime and bitters soft drink, 1/4 cup honey, 2 cinnamon sticks, 200g packet dried apples, 225g packet dried apricots , 200g packet dried pears, 200g packet dried peaches, Tamar Valley Greek Style Yoghurt, to serve .
Ingredients:
- 1 litre lemon, lime and bitters soft drink
- 1/4 cup honey
- 2 cinnamon sticks
- 200g packet dried apples
- 225g packet dried apricots
- 200g packet dried pears
- 200g packet dried peaches
- Tamar Valley Greek Style Yoghurt, to serve
Instructions
- Combine soft drink, honey and cinnamon in a large saucepan. Place over medium heat. Cook, stirring, for 2 to 3 minutes or until honey dissolves.
- Add apples, apricots, pears and peaches. Bring to the boil. Reduce heat to low. Cover and simmer, stirring, for 20 minutes or until fruit is tender. Remove cinnamon and discard.
- Reserve half the fruit and 1/4 cup of the syrup (see tip) for related recipe. Divide remaining fruit between bowls. Spoon over syrup. Serve with yoghurt.
