Elderflower cordial has been made since the time of the Romans. Try this refreshing drink to see why it remains so popular.

Ingredients:
- 1 lemon
- 1 large head fresh elderflowers
- 250g caster sugar
- 1 tsp white wine vinegar
Instructions
- Halve and juice lemon, then place squeezed halves and juice in a large glass or plastic container with flowers, sugar, vinegar and 2.5 litres water. Stir gently, then cover and stand at room temperature for 24 hours.
- The next day, strain through muslin and seal in sterilised bottles. Leave to steep in a cool, dark place for 2 weeks, then store for up to 6 months (once open, keep refrigerated and use within 2 weeks).
