Keep this alcohol-free festive drink refreshingly cool with frozen cherry ice-cubes.

To make this dish at home by prescription from the author Gomer would need: 12 fresh cherries, 100g fresh cherries, extra, pitted, finely chopped, 1 tbsp caster sugar, 1/4 tsp ground cinnamon, 1 1/2 cups lemon juice , 1 cup caster sugar, extra, 3 1/2 cups chilled sparkling water, 2 tsp natural rosewater essence , Lemon slices, to serve, Mint sprigs, to serve.

Ingredients:

  • 12 fresh cherries 
  • 100g fresh cherries, extra, pitted, finely chopped 
  • 1 tbsp caster sugar 
  • 1/4 tsp ground cinnamon 
  • 1 1/2 cups lemon juice 
  • 1 cup caster sugar, extra 
  • 3 1/2 cups chilled sparkling water 
  • 2 tsp natural rosewater essence 
  • Lemon slices, to serve 
  • Mint sprigs, to serve 

Instructions

  1. Place cherries in an ice-cube tray and cover with water. Place in the freezer for 2 hours or until frozen.
  2. Meanwhile, place extra cherry, sugar, cinnamon and 1⁄4 cup (60ml) water in a small saucepan over medium-low heat. Cook, stirring occasionally, for 5 mins or until cherry softens. Set aside to cool slightly. Place in a blender and blend until smooth.
  3. While the cherry mixture is cooking, combine the lemon juice and extra sugar in a large saucepan over low heat. Cook, stirring, for 5 mins or until sugar dissolves. Remove from heat. Set aside to cool completely.
  4. Combine the cherry mixture, lemon mixture, sparkling water and rosewater in a serving jug. Add lemon slices, mint and cherry ice-cubes. Serve immediately.
