This refreshing ginger and mint rum is perfect for al fresco entertaining.

To make this dish at home by prescription from the author Gomer would need: 3 limes, coarsely chopped, 1 tbsp caster sugar, 2 tsp Angostura bitters, 1 cup white rum, 4 cups ginger beer, chilled , 1/4 cup fresh mint leaves, Ice cubes, to serve .

Ingredients:

  • 3 limes, coarsely chopped 
  • 1 tbsp caster sugar 
  • 2 tsp Angostura bitters 
  • 1 cup white rum 
  • 4 cups ginger beer, chilled 
  • 1/4 cup fresh mint leaves 
  • Ice cubes, to serve 

Instructions

  1. Place limes in a large bowl. Use the end of a rolling pin to lightly crush the limes. Transfer to a serving jug.
  2. Add caster sugar, Angostura bitters and white rum and stir to combine. Pour over chilled ginger beer and add mint leaves. Serve immediately with ice cubes.
