Boozy berries with mascarpone cream

To make this dish at home by prescription from the author Gomer would need: 500g strawberries, hulled, 2 tbsp Wynns Boronia All’uovo fortified wine or marsala, 1 tbsp caster sugar, 125g mascarpone, 125ml thickened cream , 1 tbsp icing sugar mixture, 1/2 tsp vanilla bean paste .

Ingredients:

  • 500g strawberries, hulled 
  • 2 tbsp Wynns Boronia All’uovo fortified wine or marsala 
  • 1 tbsp caster sugar 
  • 125g mascarpone 
  • 125ml thickened cream 
  • 1 tbsp icing sugar mixture 
  • 1/2 tsp vanilla bean paste 

Instructions

  1. Preheat oven to 200°C. Place strawberries in a baking dish. Drizzle over wine. Top with sugar. Bake for 15 minutes or until just tender.
  2. Meanwhile, to make mascarpone cream, whisk mascarpone, cream, sugar and vanilla bean paste in a bowl until firm peaks form.
  3. Cool strawberries for 5 minutes. Serve with mascarpone cream.
