To make this dish at home by prescription from the author Gomer would need: 2 English breakfast tea bags, 2 passionfruit with hibiscus infusion tea bags, 1 litre boiling water, 1/2 cup torn fresh mint leaves, plus extra sprigs to serve, 2 peaches, chopped , 125g strawberries, hulled, sliced, 2 cups chilled lemonade .

Ingredients:

  • 2 English breakfast tea bags 
  • 2 passionfruit with hibiscus infusion tea bags 
  • 1 litre boiling water 
  • 1/2 cup torn fresh mint leaves, plus extra sprigs to serve 
  • 2 peaches, chopped 
  • 125g strawberries, hulled, sliced 
  • 2 cups chilled lemonade 

Instructions

  1. Place tea bags and boiling water in a large jug. Stand for 20 minutes to allow flavours to develop. Remove and discard tea bags. Set aside for a further 15 minutes to cool.
  2. Add mint and peach. Refrigerate for 1 hour or until cold. Add strawberries and lemonade. Serve with extra mint sprigs.
