Sparkling peach iced-tea bellini

Ingredients:

  • 3 ripe peaches 
  • 1 tbsp Cointreau 
  • 2 x 350ml Luscious Peach Iced Tea, chilled 
  • 750ml Champagne, chilled 

Instructions

  1. Place two peaches in a heatproof bowl. Cover with boiling water. Leave for 2 minutes, drain. Peel peaches and discard skin. Place peach flesh into a bowl, add Cointreau and process with a stick mixer until smooth. It makes about 1 cup (250 ml) puree. Cover with plastic wrap, refrigerate for 30 minutes to chill.
  2. Cut remaining peach in half and remove stone. Finely chop, slice or crush flesh. Add 1-2 tablespoons chilled peach puree to serving glasses, top with tea and champagne. Add some chopped, sliced or crushed peach flesh. Serve.
