Ingredients:

  • 95g tinned cannellini beans, rinsed, drained 
  • 1 tsp lemon juice 
  • 1 tbsp chopped fresh flat-leaf parsley 
  • 2 Arnott’s Vita-Weat Sesame, Pumpkin & Quinoa Lunch Slices 
  • 1/4 firm ripe avocado, thinly sliced 
  • 75g cherry tomatoes, halved 

Instructions

  1. Place the cannellini beans in a small bowl with the lemon juice. Mash with a fork, leaving some texture. Season with sea salt and freshly ground black pepper. Stir through the parsley.
  2. Spread bean mixture evenly over the Arnott’s Vita-Weat Sesame, Pumpkin & Quinoa Lunch Slices. Top each with some avocado slices and cherry tomatoes. Serve.
