Sesame and dark chocolate gluten-free muesli bars

To make this dish at home by prescription from the author sheff would need: 500g pkt Freedom Foods Gluten Free Muesli, 2 tsp Coles Brand Ground Cinnamon, 1/4 cup sesame seeds, 1 1/2 tbsp gluten-free cornflour, 1/2 cup unrefined coconut oil , 1/3 cup honey, 1/3 cup gluten-free maple syrup, 85g gluten-free dark chocolate, melted .

Ingredients:

  • 500g pkt Freedom Foods Gluten Free Muesli 
  • 2 tsp Coles Brand Ground Cinnamon 
  • 1/4 cup sesame seeds 
  • 1 1/2 tbsp gluten-free cornflour 
  • 1/2 cup unrefined coconut oil 
  • 1/3 cup honey 
  • 1/3 cup gluten-free maple syrup 
  • 85g gluten-free dark chocolate, melted 

Instructions

  1. Preheat oven to 180C. Grease and line the base and sides of a 30cm x 20cm slice pan with baking paper, allowing sides to overhang.
  2. Place the muesli, cinnamon, sesame seeds and cornflour in a large bowl and stir to combine. Stir the coconut oil, honey and maple syrup in a small saucepan over medium heat for 2-3 mins or until the coconut oil has melted and the mixture is warm.
  3. Pour the warm coconut oil mixture over the muesli mixture and stir until well combined. Pour the muesli mixture evenly into the prepared pan. Bake for 30 mins or until crisp and golden. Set aside to cool slightly. Transfer to the fridge to cool completely. Cut into 12 bars.
  4. Drizzle the melted chocolate over the muesli bars. Set aside for 15 mins or until chocolate has set.
