To make this dish at home by prescription from the author Gomer would need: 8 small coliban potatoes, quartered, 240g green beans, trimmed, halved lengthways, 4 salmon cutlets, 2 tsp olive oil, Salt & freshly ground pepper , 2 garlic cloves, crushed, 3cm piece ginger, peeled, finely grated, 20g Flora light pro-activ spread , 1 tsp finely grated lime rind, 1 tsp finely grated lemon rind, 150g pkt baby spinach leaves.

Ingredients:

  • 8 small coliban potatoes, quartered 
  • 240g green beans, trimmed, halved lengthways 
  • 4 salmon cutlets 
  • 2 tsp olive oil 
  • Salt & freshly ground pepper 
  • 2 garlic cloves, crushed 
  • 3cm piece ginger, peeled, finely grated 
  • 20g Flora light pro-activ spread 
  • 1 tsp finely grated lime rind 
  • 1 tsp finely grated lemon rind 
  • 150g pkt baby spinach leaves 

Instructions

  1. Microwave or steam the potatoes and beans until tender.
  2. Meanwhile, preheat a chargrill pan on a medium-high heat. Brush both sides of the salmon with 1 teaspoon of the oil. Season well with salt and pepper. Cook for 4 minutes each side or until cooked through.
  3. Heat the remaining oil in a large non-stick frying pan over a medium-high heat. Add the garlic and ginger and cook, for 1 minute. Add the spread, lime rind and lemon rind and stir until melted. Season with salt and pepper.
  4. Divide the spinach, potatoes and beans among serving plates. Top with the salmon and drizzle with the citrus sauce.
