To make this dish at home by prescription from the author Gomer would need: 8 small coliban potatoes, quartered, 240g green beans, trimmed, halved lengthways, 4 salmon cutlets, 2 tsp olive oil, Salt & freshly ground pepper , 2 garlic cloves, crushed, 3cm piece ginger, peeled, finely grated, 20g Flora light pro-activ spread , 1 tsp finely grated lime rind, 1 tsp finely grated lemon rind, 150g pkt baby spinach leaves.
Ingredients:
- 8 small coliban potatoes, quartered
- 240g green beans, trimmed, halved lengthways
- 4 salmon cutlets
- 2 tsp olive oil
- Salt & freshly ground pepper
- 2 garlic cloves, crushed
- 3cm piece ginger, peeled, finely grated
- 20g Flora light pro-activ spread
- 1 tsp finely grated lime rind
- 1 tsp finely grated lemon rind
- 150g pkt baby spinach leaves
Instructions
- Microwave or steam the potatoes and beans until tender.
- Meanwhile, preheat a chargrill pan on a medium-high heat. Brush both sides of the salmon with 1 teaspoon of the oil. Season well with salt and pepper. Cook for 4 minutes each side or until cooked through.
- Heat the remaining oil in a large non-stick frying pan over a medium-high heat. Add the garlic and ginger and cook, for 1 minute. Add the spread, lime rind and lemon rind and stir until melted. Season with salt and pepper.
- Divide the spinach, potatoes and beans among serving plates. Top with the salmon and drizzle with the citrus sauce.
