To make this dish at home by prescription from the author Gomer would need: 24 cooked large prawns, peeled leaving heads and tails intact, deveined, 1 baby cos lettuce, washed, dried, 1/2 bunch watercress, sprigs picked, washed, dried, 1 medium avocado, halved, deseeded, chopped, 1 small red onion, halved, thinly sliced , 12 fresh basil leaves, torn, 125g 97% fat free mayonnaise, 80ml water , 1 tbsp Dijon mustard, 1 garlic clove, crushed, Pinch of salt.
Ingredients:
- 24 cooked large prawns, peeled leaving heads and tails intact, deveined
- 1 baby cos lettuce, washed, dried
- 1/2 bunch watercress, sprigs picked, washed, dried
- 1 medium avocado, halved, deseeded, chopped
- 1 small red onion, halved, thinly sliced
- 12 fresh basil leaves, torn
- 125g 97% fat free mayonnaise
- 80ml water
- 1 tbsp Dijon mustard
- 1 garlic clove, crushed
- Pinch of salt
Instructions
- To make the Dijon mayonnaise, use a fork to whisk together the mayonnaise, water, mustard and crushed garlic in a jug. Taste and season with salt (if required). Stir until well combined.
- Place the prawns, cos leaves, watercress, avocado, onion and basil leaves in a large bowl. Drizzle with the dressing and gently toss to combine.
- Place the salad on serving plates and serve immediately.
