Smoked salmon and mixed pea pasta

To make this dish at home by prescription from the author Gomer would need: 350g dried spaghetti pasta, 200g sugar snap peas, trimmed, 200g snow peas, trimmed, thinly sliced lengthways, 75g light sour cream, 1 tsp finely grated lemon rind , 2 tbsp fresh lemon juice, 1 tbsp chopped fresh dill, 1 tbsp chopped fresh chives , 1 tbsp chopped fresh continental parsley, 1 bunch rocket, ends trimmed, chopped, 150g smoked salmon, thinly sliced.

Ingredients:

  • 350g dried spaghetti pasta 
  • 200g sugar snap peas, trimmed 
  • 200g snow peas, trimmed, thinly sliced lengthways 
  • 75g light sour cream 
  • 1 tsp finely grated lemon rind 
  • 2 tbsp fresh lemon juice 
  • 1 tbsp chopped fresh dill 
  • 1 tbsp chopped fresh chives 
  • 1 tbsp chopped fresh continental parsley 
  • 1 bunch rocket, ends trimmed, chopped 
  • 150g smoked salmon, thinly sliced 

Instructions

  1. Cook the spaghetti in a large saucepan of salted boiling water following packet directions. Add the sugar snap peas and snow peas in the last 1 minute of cooking. Drain and return to pan.
  2. Meanwhile, combine the sour cream, lemon rind and juice, dill, chives and parsley in a bowl. Add to the pasta and gently toss to combine. Season with pepper.
  3. Divide the rocket among serving bowls. Top with pasta and smoked salmon to serve.
