To make this dish at home by prescription from the author Gomer would need: 4 garlic cloves, crushed, 2 tbsp drained capers, finely chopped, 4 anchovies, finely chopped, 1 tbsp finely chopped fresh rosemary, 2 tbsp olive oil , 8 chicken thigh fillets, trimmed, steamed baby chat potatoes and salad leaves, to serve .

Ingredients:

  • 4 garlic cloves, crushed 
  • 2 tbsp drained capers, finely chopped 
  • 4 anchovies, finely chopped 
  • 1 tbsp finely chopped fresh rosemary 
  • 2 tbsp olive oil 
  • 8 chicken thigh fillets, trimmed 
  • steamed baby chat potatoes and salad leaves, to serve 

Instructions

  1. Combine garlic, capers, anchovies (if using), rosemary and oil in a large bowl.
  2. Cut 4 deep slits in each chicken thigh. Add chicken to garlic mixture. Rub mixture into chicken.
  3. Heat a large frying pan over mediumhigh heat. Cook chicken, in batches, for 4 to 5 minutes each side or until browned and cooked through.
  4. Serve chicken with potatoes and salad leaves.
