Smoked salmon, dill and fennel are a match made in heaven. They are the stars of this healthy pasta salad.

To make this dish at home by prescription from the author Gomer would need: 300g dried farfalle pasta, 1/4 cup sour cream, 1 lemon, rind finely grated, juiced, 2 tbsp chopped fresh dill tips, 200g sliced smoked salmon, chopped , 1 small fennel bulb, thinly sliced, 1 small red onion, thinly sliced .

Ingredients:

  • 300g dried farfalle pasta 
  • 1/4 cup sour cream 
  • 1 lemon, rind finely grated, juiced 
  • 2 tbsp chopped fresh dill tips 
  • 200g sliced smoked salmon, chopped 
  • 1 small fennel bulb, thinly sliced 
  • 1 small red onion, thinly sliced 

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain. Rinse under cold water.
  2. Combine sour cream, 2 teaspoons of lemon rind, 1/4 cup of lemon juice and dill in a bowl. Add pasta, salmon, fennel and onion. Season with salt and pepper. Toss gently to combine. Serve.
