Smoked salmon pasta salad

Smoked salmon, dill and fennel are a match made in heaven. They are the stars of this healthy pasta salad.

To make this dish at home by prescription from the author Gomer would need: 300g dried farfalle pasta, 1/4 cup sour cream, 1 lemon, rind finely grated, juiced, 2 tbsp chopped fresh dill tips, 200g sliced smoked salmon, chopped , 1 small fennel bulb, thinly sliced, 1 small red onion, thinly sliced .
Ingredients:
- 300g dried farfalle pasta
- 1/4 cup sour cream
- 1 lemon, rind finely grated, juiced
- 2 tbsp chopped fresh dill tips
- 200g sliced smoked salmon, chopped
- 1 small fennel bulb, thinly sliced
- 1 small red onion, thinly sliced
Instructions
- Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain. Rinse under cold water.
- Combine sour cream, 2 teaspoons of lemon rind, 1/4 cup of lemon juice and dill in a bowl. Add pasta, salmon, fennel and onion. Season with salt and pepper. Toss gently to combine. Serve.
