Lemon and capsicum salmon parcels

To make this dish at home by prescription from the author Gomer would need: 2 cups Roasted capsicum , thinly sliced, 1 green onion, thinly sliced, 1 garlic clove, thinly sliced, 1/2 small lemon, sliced into thin matchsticks, 1/3 cup chopped fresh herbs , 2 tsp chopped capers, 4 salmon fillets, skin off, steamed chat potatoes and lemon wedges, to serve .

Ingredients:

  • 2 cups Roasted capsicum , thinly sliced 
  • 1 green onion, thinly sliced 
  • 1 garlic clove, thinly sliced 
  • 1/2 small lemon, sliced into thin matchsticks 
  • 1/3 cup chopped fresh herbs 
  • 2 tsp chopped capers 
  • 4 salmon fillets, skin off 
  • steamed chat potatoes and lemon wedges, to serve 

Instructions

  1. Preheat oven to 200°C/180°C fan-forced. Combine capsicum, onion, garlic, lemon, herbs and capers in a bowl. Season with salt and pepper.
  2. Lightly grease one side of each piece of foil. Place 1 piece of salmon onto the centre of 1 piece of prepared foil. Top with 1/4 capsicum mixture. Fold up sides of foil and scrunch edges together, leaving a small opening in the top to allow steam to escape. Place onto a baking tray. Repeat with remaining salmon fillets and capsicum mixture.
  3. Bake fish for 20 minutes or until cooked to your liking. Stand for 2 minutes. Serve with potatoes and lemon wedges.
