To make this dish at home by prescription from the author Gomer would need: 2 telegraph cucumbers, thinly sliced crossways, 1 red onion, halved, thinly sliced, 600ml white vinegar, 440g caster sugar, 1 tsp caraway seeds , 8 rollmops, to serve, Dark rye bread, to serve, Vodka shots, to serve .

Ingredients:

  • 2 telegraph cucumbers, thinly sliced crossways 
  • 1 red onion, halved, thinly sliced 
  • 600ml white vinegar 
  • 440g caster sugar 
  • 1 tsp caraway seeds 
  • 8 rollmops, to serve 
  • Dark rye bread, to serve 
  • Vodka shots, to serve 

Instructions

  1. Combine cucumber and onion in a bowl.
  2. Place vinegar, sugar and caraway seeds in a saucepan over medium heat and bring to the boil. Reduce heat to medium-low and simmer, uncovered, for 5 minutes. Remove from heat and set aside for 15 minutes to cool.
  3. Pour vinegar mixture over cucumber mixture and set aside for 1 hour.
  4. Place pickled cucumbers in a serving dish and arrange rollmops and rye on a platter. Serve with vodka shots, if desired.
