Ingredients:
- 50g dried rice vermicelli noodles
- 1 tsp peanut oil
- 2cm piece fresh ginger, finely grated
- 2 green onions, thinly sliced
- 1/4 cup finely chopped sliced water chestnuts
- 185g can tuna in springwater, drained
- 2 tsp hoisin sauce
- 2 tsp oyster sauce
- 4 small iceberg lettuce leaves
- sliced green onions, to serve
Instructions
- Place noodles in a heatproof bowl. Cover with boiling water. Stand for 4 to 5 minutes or until tender. Using a fork, separate noodles. Drain.
- Heat oil in a frying pan over high heat. Add ginger and onion. Cook for 1 minute. Add noodles, water chestnuts, tuna, hoisin sauce and oyster sauce. Cook for 2 to 3 minutes or until heated through. Spoon mixture into lettuce. Top with onion. Serve.
