To make this dish at home by prescription from the author Gomer would need: 4 lavash breads, cut into triangles, olive oil cooking spray, 4 large Lebanese cucumbers, 2 green onions, thinly sliced, 2 tbsp capers , 3 just-ripe avocados, 1 lemon, juiced, 1 tbsp extra virgin olive oil , 500g sliced smoked salmon.

Ingredients:

  • 4 lavash breads, cut into triangles 
  • olive oil cooking spray 
  • 4 large Lebanese cucumbers 
  • 2 green onions, thinly sliced 
  • 2 tbsp capers 
  • 3 just-ripe avocados 
  • 1 lemon, juiced 
  • 1 tbsp extra virgin olive oil 
  • 500g sliced smoked salmon 

Instructions

  1. Preheat oven to 200°C. Spray lavash with oil. Place onto 2 baking trays in a single layer. Bake, turning once, for 10 minutes or until crisp. Set aside.
  2. Use a vegetable peeler to thinly slice cucumbers into ribbons. Place cucumber into a large bowl. Add onions and capers.
  3. Halve avocados lengthways. Peel and remove stones. Cut into 1cm-thick slices. Drizzle with 1 tablespoon of lemon juice to prevent browning. Add avocados to cucumber mixture. Season with salt and pepper. Drizzle with oil. Toss gently.
  4. Arrange salad on a platter. Top with salmon. Drizzle with remaining lemon juice. Season with salt and pepper.
