Ingredients:

  • 4 x 180g salmon fillet portions 
  • 1/4 cup olive oil 
  • 2 tbsp chopped flat-leaf parsley 
  • 1 tbsp finely grated lemon rind 
  • 1/4 cup shredded basil 
  • 2/3 cup whole egg mayonnaise 
  • 3 tsp Dijon mustard 

Instructions

  1. Combine the oil, lemon rind, parsley, salt and pepper. Place the salmon fillets in a large non-metallic bowl and pour over the marinade, turning to coat. Cover and refrigerate for 5 minutes.
  2. Meanwhile, mix together the basil, mustard, mayonnaise and 2 tablespoons water until well combined. Set aside. Heat a barbecue hot plate or grill to hot. Oil the surface well, drain the salmon and place on the barbecue. Cook for 3 minutes on each side or until cooked to your liking.
  3. Serve salmon with basil mayonnaise and lemon wedges.
