Smoked trout with tzatziki

This simple salad will transport your tastebuds on a Mediterranean journey with the fresh flavours of home-made tzatziki.

To make this dish at home by prescription from the author Gomer would need: 2 baby cos lettuce, leaves separated, 1 tbsp lemon juice, 1 tbsp olive oil, 450g smoked trout, broken into pieces, 2 x 15cm rounds of Lebanese bread, toasted, torn into pieces , 1 cup Tamar Valley Greek Style Yoghurt, 1 small Lebanese cucumber, seeds removed, finely chopped, 1 small garlic clove, crushed , 2 tbsp lemon juice, 2 tbsp dill leaves, roughly chopped.

Ingredients:

  • 2 baby cos lettuce, leaves separated 
  • 1 tbsp lemon juice 
  • 1 tbsp olive oil 
  • 450g smoked trout, broken into pieces 
  • 2 x 15cm rounds of Lebanese bread, toasted, torn into pieces 
  • 1 cup Tamar Valley Greek Style Yoghurt 
  • 1 small Lebanese cucumber, seeds removed, finely chopped 
  • 1 small garlic clove, crushed 
  • 2 tbsp lemon juice 
  • 2 tbsp dill leaves, roughly chopped 

Instructions

  1. For the tzatziki, mix all ingredients in a bowl and stir to combine.
  2. Toss the cos with lemon juice and oil. Add the trout and torn bread.
  3. Arrange salad on serving plates and top with a spoonful of tzatziki.
