Turn a can of crab meat, 2-minute noodles, eggs and a couple of veggies into a nutritious, tasty and fast omelette meal.

To make this dish at home by prescription from the author Gomer would need: 1/2 packet instant noodles, 2 eggs, 2 tbsp Coon Pizza Cheese, 1 tsp butter, 30g snow peas, trimmed, thinly sliced , 1/4 small red capsicum, thinly sliced, 170g can crab meat, drained, 20g snow pea sprouts , multigrain bread slices, toasted, to serve.

Ingredients:

  • 1/2 packet instant noodles 
  • 2 eggs 
  • 2 tbsp Coon Pizza Cheese 
  • 1 tsp butter 
  • 30g snow peas, trimmed, thinly sliced 
  • 1/4 small red capsicum, thinly sliced 
  • 170g can crab meat, drained 
  • 20g snow pea sprouts 
  • multigrain bread slices, toasted, to serve 

Instructions

  1. Cook noodles following packet directions. Drain. Break eggs into a bowl. Using a fork, whisk until well combined. Add noodles and cheese. Season with pepper.
  2. Melt butter in a 22cm (base) non-stick frying pan over medium heat. When sizzling, pour in egg mixture. Reduce heat to medium-low. Cook for 5 minutes or until base is light golden (top still wet).
  3. Place snow peas, capsicum and crab meat over half the omelette. Fold other half of omelette over to cover filling. Slide omelette onto a serving plate. Top with snow pea sprouts and season with salt and pepper.
  4. Serve omelette with toast.
