Cider and mustard braised sausages with roast veg

To make this dish at home by prescription from the author sheff would need: 600g baby potatoes, cut into wedges, 1 mini red cabbage, cut into wedges, 2 Pink Lady apples, cored, cut into wedges, 2 sage sprigs, 1 1/2 tbsp olive oil , 8 Coles classic pork sausages, 1/2 cup salt-reduced chicken stock, 1/2 cup apple cider , 1 tbsp wholegrain mustard, 1 garlic clove, crushed, 2 tsp cornflour, 1 spring onion, thinly sliced.
Ingredients:
- 600g baby potatoes, cut into wedges
- 1 mini red cabbage, cut into wedges
- 2 Pink Lady apples, cored, cut into wedges
- 2 sage sprigs
- 1 1/2 tbsp olive oil
- 8 Coles classic pork sausages
- 1/2 cup salt-reduced chicken stock
- 1/2 cup apple cider
- 1 tbsp wholegrain mustard
- 1 garlic clove, crushed
- 2 tsp cornflour
- 1 spring onion, thinly sliced
Instructions
- Preheat oven to 220C. Line a large baking tray with baking paper.
- Place the potato, cabbage, apple and sage on the prepared tray. Drizzle with 1 tbs oil. Season with salt and pepper. Bake for 20 mins or until lightly browned and tender.
- Meanwhile, heat the remaining oil in a medium frying pan over medium-high heat. Add the sausages and cook, turning, for 4-5 mins or until browned all over. Combine the stock, cider, mustard and garlic in a jug. Add the cider mixture to the pan. Reduce heat to medium-low and cook, covered, for 5 mins or until sausages are cooked.
- Transfer sausages to a plate. Combine the cornflour with 1 tablespoon cold water in a small jug. Add to the pan and cook, stirring, for 2 mins or until the sauce boils and thickens.
- Transfer the sausages and veggies to a serving platter. Drizzle with the sauce and sprinkle with spring onion to serve.
