To make this dish at home by prescription from the author sheff would need: 2 tbsp olive oil, 1 onion, finely chopped, 2 garlic cloves, finely chopped, 2 pork and fennel sausages or regular good-quality pork sausages, casings removed, 1 tbsp tomato paste , 400g can chopped tomatoes, 3 sage leaves, chopped, or 1/2 tsp dried sage, 1/2 cup Massel beef stock or water , 400g can cannellini beans, rinsed, drained, 250g ditalini or macaroni, Toasted crusty bread and grated parmesan, to serve.

Ingredients:

  • 2 tbsp olive oil 
  • 1 onion, finely chopped 
  • 2 garlic cloves, finely chopped 
  • 2 pork and fennel sausages or regular good-quality pork sausages, casings removed 
  • 1 tbsp tomato paste 
  • 400g can chopped tomatoes 
  • 3 sage leaves, chopped, or 1/2 tsp dried sage 
  • 1/2 cup Massel beef stock or water 
  • 400g can cannellini beans, rinsed, drained 
  • 250g ditalini or macaroni 
  • Toasted crusty bread and grated parmesan, to serve 

Instructions

  1. Heat oil in a large pan over medium heat. Cook onion for 2-3 minutes, stirring, until softened. Add garlic and cook for 1 minute, stirring, then add sausage meat and cook for 3-4 minutes, breaking up any lumps with a wooden spoon, until browned. Add tomato paste, chopped tomato, sage and stock, season, then simmer for 8-10 minutes, stirring occasionally, until slightly thickened. Stir in beans, then cool slightly.
  2. Meanwhile, cook the pasta according to packet instructions until al dente. Drain.
  3. Place 1 cup of the cooled sauce in a blender and whiz until smooth. Return to the pan with remaining sauce and cook over low heat, stirring, for 2-3 minutes to warm through, then stir in the pasta. Pile the pasta and sauce over slices of toasted bread, sprinkle with parmesan and serve.
