To make this dish at home by prescription from the author sheff would need: 1 tbsp olive oil, 500g Coles Italian pork sausages, casings removed, 1 medium brown onion, finely chopped, 100g sundried tomatoes, from the deli,cut into thirds, 1/3 cup dry white wine , 1/2 tsp dried chilli flakes, 80g pitted olives, from the deli, pitted and cut in halves, 400g can Italian diced tomatoes, chopped , 350g Coles penne pasta, 2 cloves garlic, finely chopped, Grated parmesan cheese, to serve.

Ingredients:

  • 1 tbsp olive oil 
  • 500g Coles Italian pork sausages, casings removed 
  • 1 medium brown onion, finely chopped 
  • 100g sundried tomatoes, from the deli,cut into thirds 
  • 1/3 cup dry white wine 
  • 1/2 tsp dried chilli flakes 
  • 80g pitted olives, from the deli, pitted and cut in halves 
  • 400g can Italian diced tomatoes, chopped 
  • 350g Coles penne pasta 
  • 2 cloves garlic, finely chopped 
  • Grated parmesan cheese, to serve 

Instructions

  1. Heat oil over in a large saucepan over medium high heat. Add the sausages, breaking them up into chunks with a wooden spoon, cook for 4-5 minutes or until browned. Add the onion and garlic and cook for 4 minutes, or until softened.
  2. Add the wine and allow to bubble for 2 minutes. Add the sundried tomatoes, olives, tomatoes and chilli flakes. Season to taste. Simmer for 10 minutes, or until sauce has thickened.
  3. Meanwhile, cook the penne according to packet directions.
