To make this dish at home by prescription from the author sheff would need: 1 tbsp olive oil, 500g Coles Italian pork sausages, casings removed, 1 medium brown onion, finely chopped, 100g sundried tomatoes, from the deli,cut into thirds, 1/3 cup dry white wine , 1/2 tsp dried chilli flakes, 80g pitted olives, from the deli, pitted and cut in halves, 400g can Italian diced tomatoes, chopped , 350g Coles penne pasta, 2 cloves garlic, finely chopped, Grated parmesan cheese, to serve.
Ingredients:
- 1 tbsp olive oil
- 500g Coles Italian pork sausages, casings removed
- 1 medium brown onion, finely chopped
- 100g sundried tomatoes, from the deli,cut into thirds
- 1/3 cup dry white wine
- 1/2 tsp dried chilli flakes
- 80g pitted olives, from the deli, pitted and cut in halves
- 400g can Italian diced tomatoes, chopped
- 350g Coles penne pasta
- 2 cloves garlic, finely chopped
- Grated parmesan cheese, to serve
Instructions
- Heat oil over in a large saucepan over medium high heat. Add the sausages, breaking them up into chunks with a wooden spoon, cook for 4-5 minutes or until browned. Add the onion and garlic and cook for 4 minutes, or until softened.
- Add the wine and allow to bubble for 2 minutes. Add the sundried tomatoes, olives, tomatoes and chilli flakes. Season to taste. Simmer for 10 minutes, or until sauce has thickened.
- Meanwhile, cook the penne according to packet directions.
