These balls of mince and rice are perfect for Chinese New Year celebrations.

To make this dish at home by prescription from the author sheff would need: 1 cup calrose rice, 500g lean pork mince, 1/4 cup soy sauce, 2 tbsp cornflour, 40g button mushrooms, finely chopped , 1/2 x 227g can sliced water chestnuts, drained, rinsed, finely chopped, 3 green onions, thinly sliced, 1 small carrot, peeled, grated , Chilli sauce or soy sauce, to serve.
Ingredients:
- 1 cup calrose rice
- 500g lean pork mince
- 1/4 cup soy sauce
- 2 tbsp cornflour
- 40g button mushrooms, finely chopped
- 1/2 x 227g can sliced water chestnuts, drained, rinsed, finely chopped
- 3 green onions, thinly sliced
- 1 small carrot, peeled, grated
- Chilli sauce or soy sauce, to serve
Instructions
- Place rice in a bowl. Cover with cold water. Soak for 30 minutes. Drain.
- Using hands, combine mince, soy sauce, cornflour, mushrooms, water chestnuts, onion and carrot in a bowl.
- Place rice in a shallow dish. Using 1 heaped tablespoon of mince mixture at a time, roll into 20 balls. Roll balls in rice to coat. Place on a tray lined with baking paper.
- Place a large steamer lined with baking paper over a wok or large saucepan of simmering water. Cook, covered, in batches, for 20 minutes or until cooked through. Transfer to a plate. Cover to keep warm. Serve with chilli sauce or soy sauce..
