This sweet and spicy salsa is the perfect partner to lamb backstraps, pork cutlets or lamb tagine.

Ingredients:

  • 5 fresh dates, pitted, chopped 
  • 2 tbsp pistachio kernels, finely chopped 
  • 1/2 cup shredded fresh mint leaves 
  • 2 oranges 

Instructions

  1. Combine date, pistachio and mint in a bowl.
  2. Peel and segment oranges, reserving membrane. Cut orange segments in half. Add to salsa. Squeeze reserved orange membrane over salsa. Discard membrane. Toss gently to combine. Serve.
