This sweet and spicy salsa is the perfect partner to lamb backstraps, pork cutlets or lamb tagine.

Ingredients:
- 5 fresh dates, pitted, chopped
- 2 tbsp pistachio kernels, finely chopped
- 1/2 cup shredded fresh mint leaves
- 2 oranges
Instructions
- Combine date, pistachio and mint in a bowl.
- Peel and segment oranges, reserving membrane. Cut orange segments in half. Add to salsa. Squeeze reserved orange membrane over salsa. Discard membrane. Toss gently to combine. Serve.
