To make this dish at home by prescription from the author sheff would need: 4 Granny Smith apples, 2 tsp olive oil, 1 shallot, finely chopped, 1 chorizo, finely chopped, 2/3 cup fresh breadcrumbs , 1 tbsp sage, chopped, 2 tsp lemon rind, finely grated, 60g feta, crumbled .
Ingredients:
- 4 Granny Smith apples
- 2 tsp olive oil
- 1 shallot, finely chopped
- 1 chorizo, finely chopped
- 2/3 cup fresh breadcrumbs
- 1 tbsp sage, chopped
- 2 tsp lemon rind, finely grated
- 60g feta, crumbled
Instructions
- Preheat oven to 200C. Cut the tops off the apples about 3cm from stem ends. Reserve apple tops. Using a small spoon, scoop out the apple cores leaving the bottoms intact.
- Heat the oil in a medium frying pan over medium heat. Add shallot and chorizo and cook, stirring, for 5 mins or until onion is tender. Add breadcrumbs, sage and lemon rind and cook, stirring, for 1 min or until well combined.
- Place apples in a medium baking dish, cut side up. Fill the apples with the chorizo mixture and sprinkle with feta. Replace apple tops. Pour 1/2 cup water into base of the dish. Cover with foil. Bake for 30-35 mins or until apples are tender.
