You can't beat a traditional lasagne for a hearty winter warmer that everyone adores!

To make this dish at home by prescription from the author sheff would need: 2 tsp olive oil, 1 onion, diced, 500g veal mince, 500g pork mince, 1 carrot, peeled and grated , 2 zucchini, grated, 200g cup mushrooms, sliced, 1 tbsp no-added-salt tomato paste , 400g can diced tomatoes, 1 tsp dried oregano, 100g spinach leaves, 5 fresh lasagne sheets, 500g fresh ricotta cheese, 1/2 cup skim milk, 1/2 cup Coles Brand Light Shredded Tasty Cheese.
Ingredients:
- 2 tsp olive oil
- 1 onion, diced
- 500g veal mince
- 500g pork mince
- 1 carrot, peeled and grated
- 2 zucchini, grated
- 200g cup mushrooms, sliced
- 1 tbsp no-added-salt tomato paste
- 400g can diced tomatoes
- 1 tsp dried oregano
- 100g spinach leaves
- 5 fresh lasagne sheets
- 500g fresh ricotta cheese
- 1/2 cup skim milk
- 1/2 cup Coles Brand Light Shredded Tasty Cheese
Instructions
- Preheat oven to 180C (160C fan-forced). Heat oil in a heavy-based saucepan or frying pan on medium heat. Add onion and garlic and cook for 2-3 mins, until softened. Add minces and cook for 5 mins, breaking up any lumps with the back of a wooden spoon. Add carrot, zucchini, mushrooms, tomato paste, tomatoes, oregano and ½ cup of water. Bring to the boil, reduce heat and simmer for 30 mins, until reduced slightly. Stir through spinach.
- Place 1 lasagne sheet on the base of a 28cm x 18cm ovenproof dish, spread with quarter of the mince mixture and continue with remaining mince and lasagne sheets, finishing with a lasagne layer.
- Combine ricotta and skim milk. Spread over lasagne layer, smoothing to the edges, and top with grated cheese. Bake for 25-30 mins, until golden.
