Spicy barbecue rub

This flavour-filled rub is great for marinating beef steaks, pork chops and lamb cutlets.

To make this dish at home by prescription from the author sheff would need: 1 tbsp coriander seeds, 2 tsp cumin seeds, 1 tbsp dried oregano, 1 tsp smoked paprika, 1 tsp sea salt flakes , 1/2 tsp garlic powder, 1/4 tsp cayenne pepper, 1 tbsp brown sugar , Pinch black pepper.
Ingredients:
- 1 tbsp coriander seeds
- 2 tsp cumin seeds
- 1 tbsp dried oregano
- 1 tsp smoked paprika
- 1 tsp sea salt flakes
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1 tbsp brown sugar
- Pinch black pepper
Instructions
- Place the coriander and cumin seeds in a frying pan over medium heat. Cook, stirring, for 1-2 minutes or until toasted. Set aside for 10 minutes to cool.
- Transfer to a mortar and pound with a pestle until coarsely crushed.
- Combine the coriander mixture, oregano, paprika, salt, garlic powder, cayenne pepper, brown sugar and pepper in an airtight container.
