Prosciutto-wrapped meatloaf

To make this dish at home by prescription from the author sheff would need: 500g Coles Bolognese Pork & Beef Mince, 3/4 cup fresh breadcrumbs, 1 egg, 1/2 cup finely grated parmesan, 2 tbsp chopped flat-leaf parsley , 4 slices prosciutto, 3 large brushed potatoes, peeled, chopped, 2 tbsp olive oil , 500g jar napolitana pasta sauce, 2 garlic cloves, thinly sliced, 1 mini savoy cabbage, trimmed, core removed, cut into wedges.
Ingredients:
- 500g Coles Bolognese Pork & Beef Mince
- 3/4 cup fresh breadcrumbs
- 1 egg
- 1/2 cup finely grated parmesan
- 2 tbsp chopped flat-leaf parsley
- 4 slices prosciutto
- 3 large brushed potatoes, peeled, chopped
- 2 tbsp olive oil
- 500g jar napolitana pasta sauce
- 2 garlic cloves, thinly sliced
- 1 mini savoy cabbage, trimmed, core removed, cut into wedges
Instructions
- Preheat oven to 200C (180C fan-forced). Combine mince, breadcrumbs, egg, parmesan and parsley in a bowl. Season. Shape into a 20cm-long log. Wrap prosciutto, slightly overlapping, around log. Place in a medium ovenproof dish and bake for 15 mins.
- Meanwhile, cook potato in a microwave-safe container, covered with water and a lid, on high for 4-5 mins or until almost tender. Drain on paper towel. Place on a baking tray. Drizzle with 1 tablespoon oil. Season with salt. Toss.
- Pour sauce around meatloaf. Bake with the potatoes for 30 mins or until cooked through and the potatoes are crisp and golden.
- Heat remaining oil in a large saucepan over high heat. Cook garlic for 1 min. Add cabbage and 1/4 cup water. Cook for 2 mins. Cover and cook for 2-3 mins or until just tender.
- Cut the meatloaf into 8 slices. Serve with potato and cabbage. Spoon over the sauce.
