To make this dish at home by prescription from the author sheff would need: Olive oil spray, 560g pkt Coles Australian Beef & Pork Meatballs, 4 Coles Brand White Soft Wraps, 310g jar grilled eggplant, drained, 250g vine-ripened cherry tomatoes, halved , 60g pkt Coles Brand Australian Baby Rocket, 150g Coles Brand Basil Pesto .
Ingredients:
- Olive oil spray
- 560g pkt Coles Australian Beef & Pork Meatballs
- 4 Coles Brand White Soft Wraps
- 310g jar grilled eggplant, drained
- 250g vine-ripened cherry tomatoes, halved
- 60g pkt Coles Brand Australian Baby Rocket
- 150g Coles Brand Basil Pesto
Instructions
- Preheat oven 200C. Spray a baking tray with oil. Place the meatballs on the prepared tray and spray with oil. Bake for 30 mins or until golden and cooked through.
- Meanwhile, prepare the wraps following packet directions.
- Place the wraps on serving plates. Top with the eggplant, tomato, rocket and meatballs. Drizzle with pesto.
