To make this dish at home by prescription from the author sheff would need: Olive oil spray, 560g pkt Coles Australian Beef & Pork Meatballs, 4 Coles Brand White Soft Wraps, 310g jar grilled eggplant, drained, 250g vine-ripened cherry tomatoes, halved , 60g pkt Coles Brand Australian Baby Rocket, 150g Coles Brand Basil Pesto .

Ingredients:

  • Olive oil spray 
  • 560g pkt Coles Australian Beef & Pork Meatballs 
  • 4 Coles Brand White Soft Wraps 
  • 310g jar grilled eggplant, drained 
  • 250g vine-ripened cherry tomatoes, halved 
  • 60g pkt Coles Brand Australian Baby Rocket 
  • 150g Coles Brand Basil Pesto 

Instructions

  1. Preheat oven 200C. Spray a baking tray with oil. Place the meatballs on the prepared tray and spray with oil. Bake for 30 mins or until golden and cooked through.
  2. Meanwhile, prepare the wraps following packet directions.
  3. Place the wraps on serving plates. Top with the eggplant, tomato, rocket and meatballs. Drizzle with pesto.
