To make this dish at home by prescription from the author sheff would need: 2 tsp peanut oil, 400g pork mince, 1 1/2 tbsp hoisin sauce, 1 tbsp soy sauce, 4 soft flour tortillas , 3 iceberg lettuce leaves, coarsely shredded, 1/2 Lebanese cucumber, thinly sliced, 2/3 cup bean sprouts, trimmed , 1 green shallot, thinly sliced, 1 long fresh red chilli, thinly sliced, 1 1/2 tbsp roasted peanuts.
Ingredients:
- 2 tsp peanut oil
- 400g pork mince
- 1 1/2 tbsp hoisin sauce
- 1 tbsp soy sauce
- 4 soft flour tortillas
- 3 iceberg lettuce leaves, coarsely shredded
- 1/2 Lebanese cucumber, thinly sliced
- 2/3 cup bean sprouts, trimmed
- 1 green shallot, thinly sliced
- 1 long fresh red chilli, thinly sliced
- 1 1/2 tbsp roasted peanuts
Instructions
- Heat the oil in a wok or large frying pan over high heat until just smoking. Stir-fry mince for 2-3 minutes or until browned. Add sauces and stir-fry for 1-2 minutes or until well combined and thickened.
- Meanwhile, preheat a chargrill on medium-high. Cook the tortillas for 1 minute each side until lightly charred. Set aside and cover to keep warm.
- Top tortillas with lettuce, pork mixture, cucumber, bean sprouts, shallot, chilli and peanuts.
