To make this dish at home by prescription from the author sheff would need: 2 tsp peanut oil, 400g pork mince, 1 1/2 tbsp hoisin sauce, 1 tbsp soy sauce, 4 soft flour tortillas , 3 iceberg lettuce leaves, coarsely shredded, 1/2 Lebanese cucumber, thinly sliced, 2/3 cup bean sprouts, trimmed , 1 green shallot, thinly sliced, 1 long fresh red chilli, thinly sliced, 1 1/2 tbsp roasted peanuts.

Ingredients:

  • 2 tsp peanut oil 
  • 400g pork mince 
  • 1 1/2 tbsp hoisin sauce 
  • 1 tbsp soy sauce 
  • 4 soft flour tortillas 
  • 3 iceberg lettuce leaves, coarsely shredded 
  • 1/2 Lebanese cucumber, thinly sliced 
  • 2/3 cup bean sprouts, trimmed 
  • 1 green shallot, thinly sliced 
  • 1 long fresh red chilli, thinly sliced 
  • 1 1/2 tbsp roasted peanuts 

Instructions

  1. Heat the oil in a wok or large frying pan over high heat until just smoking. Stir-fry mince for 2-3 minutes or until browned. Add sauces and stir-fry for 1-2 minutes or until well combined and thickened.
  2. Meanwhile, preheat a chargrill on medium-high. Cook the tortillas for 1 minute each side until lightly charred. Set aside and cover to keep warm.
  3. Top tortillas with lettuce, pork mixture, cucumber, bean sprouts, shallot, chilli and peanuts.
