Italian sausages with pumpkin and potato mash

To make this dish at home by prescription from the author sheff would need: 450g pumpkin, peeled, cut into chunks, 2 medium potatoes, quartered, 40g butter, chopped, 2 tbsp olive oil, 2 x 500g packets italian pork sausages , 375g packet green beans, trimmed, 2 tbsp chives, chopped, 1/2 cup tomato chutney .

Ingredients:

  • 450g pumpkin, peeled, cut into chunks 
  • 2 medium potatoes, quartered 
  • 40g butter, chopped 
  • 2 tbsp olive oil 
  • 2 x 500g packets italian pork sausages 
  • 375g packet green beans, trimmed 
  • 2 tbsp chives, chopped 
  • 1/2 cup tomato chutney 

Instructions

  1. Boil, steam, or microwave the pumpkin and potato until tender. Drain. Mash in a large bowl with butter until smooth. Season.
  2. Meanwhile, heat half the oil in a large frying pan over medium-high heat. Cook sausages for 12 minutes or until browned. Keep warm. Steam beans over a saucepan of boiling water for 2 minutes or until just tender. Drain and toss with remaining oil and chives.
  3. Serve the sausages with mash, beans and tomato chutney.
