To make this dish at home by prescription from the author sheff would need: 1kg butternut pumpkin, peeled, cut into 4cm pieces, 4 small red onions, quartered, 6 garlic cloves, unpeeled, 2 tbsp Alfa One rice bran oil, 8 thick pork sausages , 2 tbsp small fresh basil leaves, 1/2 cup shaved parmesan cheese .
Ingredients:
- 1kg butternut pumpkin, peeled, cut into 4cm pieces
- 4 small red onions, quartered
- 6 garlic cloves, unpeeled
- 2 tbsp Alfa One rice bran oil
- 8 thick pork sausages
- 2 tbsp small fresh basil leaves
- 1/2 cup shaved parmesan cheese
Instructions
- Preheat oven to 180°C/160°C fan-forced. Lightly grease a large baking dish.
- Place pumpkin, onion and garlic in prepared dish. Drizzle with oil. Toss to coat. Bake for 30 minutes or until vegetables start to soften.
- Meanwhile, heat a non-stick frying pan over medium heat. Cook sausages, turning, for 5 minutes or until browned.
- Add sausages to pumpkin mixture. Bake for 20 minutes or until pumpkin is tender and sausages cooked through.
- Serve topped with basil and parmesan.
