To make this dish at home by prescription from the author sheff would need: 1kg butternut pumpkin, peeled, cut into 4cm pieces, 4 small red onions, quartered, 6 garlic cloves, unpeeled, 2 tbsp Alfa One rice bran oil, 8 thick pork sausages , 2 tbsp small fresh basil leaves, 1/2 cup shaved parmesan cheese .

Ingredients:

  • 1kg butternut pumpkin, peeled, cut into 4cm pieces 
  • 4 small red onions, quartered 
  • 6 garlic cloves, unpeeled 
  • 2 tbsp Alfa One rice bran oil 
  • 8 thick pork sausages 
  • 2 tbsp small fresh basil leaves 
  • 1/2 cup shaved parmesan cheese 

Instructions

  1. Preheat oven to 180°C/160°C fan-forced. Lightly grease a large baking dish.
  2. Place pumpkin, onion and garlic in prepared dish. Drizzle with oil. Toss to coat. Bake for 30 minutes or until vegetables start to soften.
  3. Meanwhile, heat a non-stick frying pan over medium heat. Cook sausages, turning, for 5 minutes or until browned.
  4. Add sausages to pumpkin mixture. Bake for 20 minutes or until pumpkin is tender and sausages cooked through.
  5. Serve topped with basil and parmesan.
