Ingredients:

  • 750g small Red Rascal potatoes 
  • 3 large Pink Lady apples, quartered, cored 
  • 2 tbsp olive oil 
  • 2 tbsp chopped fresh rosemary 
  • 900g Pork Rib Roast 

Instructions

  1. Preheat oven to 180°C. Cut the potatoes into thin wedges. Cut each apple quarter in half lengthways.
  2. Combine the potato, apple, oil and rosemary in a large baking dish. Season with salt and pepper.
  3. Season the pork with salt and pepper. Place in the centre of the baking dish. Bake for 35-40 minutes or until the potato and apple are golden and the pork is lightly browned and cooked through.
  4. Thickly slice the pork and serve with the potato and apple.
