Sweet potato and maple pork sausage tray bake

To make this dish at home by prescription from the author sheff would need: 60ml extra virgin olive oil, 16 fresh sage leaves, 8 good-quality gluten-free thick pork sausages, 1 red onion, cut into thin wedges, 600g sweet potato, cut into 3cm pieces , 1 tbsp maple syrup, 1 tbsp apple cider vinegar, Steamed greens, to serve .

Ingredients:

  • 60ml extra virgin olive oil 
  • 16 fresh sage leaves 
  • 8 good-quality gluten-free thick pork sausages 
  • 1 red onion, cut into thin wedges 
  • 600g sweet potato, cut into 3cm pieces 
  • 1 tbsp maple syrup 
  • 1 tbsp apple cider vinegar 
  • Steamed greens, to serve 

Instructions

  1. Preheat oven to 180C/160C fan forced. Heat 1 tbs of the oil in a flameproof roasting pan over medium heat. Cook 12 of the sage leaves, turning, for 1 minute or until crisp. Transfer to paper towel to drain.
  2. Heat 1 tbs of the oil in pan over medium heat. Cook sausages, turning, for 8 minutes or until golden. Transfer to a plate. Add onion. Cook, stirring, for 2 minutes or until soft. Transfer to a separate plate.
  3. Heat remaining oil in pan. Cook sweet potato, turning, for 6 minutes or until golden. Return onion to pan. Bake for 25 minutes or until sweet potato is tender. Add sausages to pan. Bake for a further 8 minutes or until sausages are cooked through.
  4. Finely chop remaining sage leaves. Combine maple syrup, vinegar and chopped sage in a bowl. Season. Pour over sweet potato mixture. Bake for a further 3 minutes. Sprinkle with fried sage leaves. Serve with steamed greens if desired.
