To make this dish at home by prescription from the author sheff would need: 1 tbsp peanut oil, 300g pork mince, 1 garlic clove, crushed, 2 tbsp brown sugar, 1 tbsp fish sauce , 1/2 tsp finely grated lime rind, 2 tsp lime juice, 2 tbsp chopped fresh coriander leaves , 4 baby cos lettuce leaves.

Ingredients:

  • 1 tbsp peanut oil 
  • 300g pork mince 
  • 1 garlic clove, crushed 
  • 2 tbsp brown sugar 
  • 1 tbsp fish sauce 
  • 1/2 tsp finely grated lime rind 
  • 2 tsp lime juice 
  • 2 tbsp chopped fresh coriander leaves 
  • 4 baby cos lettuce leaves 

Instructions

  1. Heat oil in a wok or medium frying pan over mediumhigh heat. Cook mince and garlic for 5 to 7 minutes, stirring constantly, or until pork is browned and cooked through.
  2. Reduce heat to medium. Add sugar, fish sauce, lime rind and juice. Cook, stirring, for 5 minutes or until mixture thickens. Remove from heat. Stir in coriander.
  3. Microwave pork mixture on medium-high (75%) for 2 to 3 minutes or until heated through. Spoon into lettuce leaves. Serve.
