To make this dish at home by prescription from the author sheff would need: 1 tbsp peanut oil, 300g pork mince, 1 garlic clove, crushed, 2 tbsp brown sugar, 1 tbsp fish sauce , 1/2 tsp finely grated lime rind, 2 tsp lime juice, 2 tbsp chopped fresh coriander leaves , 4 baby cos lettuce leaves.
Ingredients:
- 1 tbsp peanut oil
- 300g pork mince
- 1 garlic clove, crushed
- 2 tbsp brown sugar
- 1 tbsp fish sauce
- 1/2 tsp finely grated lime rind
- 2 tsp lime juice
- 2 tbsp chopped fresh coriander leaves
- 4 baby cos lettuce leaves
Instructions
- Heat oil in a wok or medium frying pan over mediumhigh heat. Cook mince and garlic for 5 to 7 minutes, stirring constantly, or until pork is browned and cooked through.
- Reduce heat to medium. Add sugar, fish sauce, lime rind and juice. Cook, stirring, for 5 minutes or until mixture thickens. Remove from heat. Stir in coriander.
- Microwave pork mixture on medium-high (75%) for 2 to 3 minutes or until heated through. Spoon into lettuce leaves. Serve.
