Sweet plum and star anise pork

This Chinese-inspired dish is given a lovely sticky-sweet texture thanks to plum jam.

To make this dish at home by prescription from the author sheff would need: 2 tsp rice bran oil, 750g pork neck , cut into 3cm pieces, 2 garlic cloves, finely chopped, 2cm piece fresh ginger, finely grated, 1/4 cup shao hsing , 3/4 cup plum jam, 1 1/2 cups Massel salt reduced chicken style liquid stock, 2 star anise , 1 tbsp soy sauce, 2 tbsp fresh coriander sprigs, Steamed jasmine rice and snow peas, to serve.
Ingredients:
- 2 tsp rice bran oil
- 750g pork neck , cut into 3cm pieces
- 2 garlic cloves, finely chopped
- 2cm piece fresh ginger, finely grated
- 1/4 cup shao hsing
- 3/4 cup plum jam
- 1 1/2 cups Massel salt reduced chicken style liquid stock
- 2 star anise
- 1 tbsp soy sauce
- 2 tbsp fresh coriander sprigs
- Steamed jasmine rice and snow peas, to serve
Instructions
- Heat oil in a heavy-based saucepan over medium-high heat. Cook pork, in batches, 5 minutes or until browned. Transfer to plate.
- Add garlic and ginger to pan. Cook, stirring, for 1 minute or until fragrant. Add wine. Cook for 1 minute or until reduced. Return pork to pan with jam, stock and star anise. Simmer, uncovered, for 1 hour 30 minutes or until sauce is thick and pork is tender. Discard star anise. Stir in soy. Season.
- Sprinkle pork with coriander. Serve with rice and snow peas.
