Thai pork salad with pineapple

Juicy pineapple pieces sweeten up this tangy Asian-style salad and offer loads of vitamin C at the same time.

To make this dish at home by prescription from the author sheff would need: 4 pork loin medallions, Olive oil spray, 1/2 pineapple, peeled, cored, halved lengthways, thinly sliced, 200g grape tomatoes, halved lengthways, 2 Lebanese cucumbers, peeled, halved lengthways, thinly sliced , 80g watercress sprigs, 2/3 cup fresh coriander sprigs, 2 tbsp fresh lime juice , 1 tbsp sweet chilli sauce, 1 garlic clove, crushed, 1 tsp finely grated fresh ginger, 1/2 tsp fish sauce.
Ingredients:
- 4 pork loin medallions
- Olive oil spray
- 1/2 pineapple, peeled, cored, halved lengthways, thinly sliced
- 200g grape tomatoes, halved lengthways
- 2 Lebanese cucumbers, peeled, halved lengthways, thinly sliced
- 80g watercress sprigs
- 2/3 cup fresh coriander sprigs
- 2 tbsp fresh lime juice
- 1 tbsp sweet chilli sauce
- 1 garlic clove, crushed
- 1 tsp finely grated fresh ginger
- 1/2 tsp fish sauce
Instructions
- Preheat a frying pan over medium heat. Spray the pork with olive oil spray and season with salt and pepper. Add pork to the pan and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 3 minutes to rest.
- Meanwhile, to make the dressing, combine the lime juice, sweet chilli sauce, garlic, ginger and fish sauce in a small bowl.
- Thinly slice the pork across the grain. Place the pork, pineapple, tomato, cucumber, watercress and coriander in a large bowl. Drizzle over the dressing and toss to combine. Divide among serving bowls and serve.
