Thai pork salad with pineapple

To make this dish at home by prescription from the author sheff would need: 4 pork loin medallions, Olive oil spray, 1/2 pineapple, peeled, cored, halved lengthways, thinly sliced, 200g grape tomatoes, halved lengthways, 2 Lebanese cucumbers, peeled, halved lengthways, thinly sliced , 80g watercress sprigs, 2/3 cup fresh coriander sprigs, 2 tbsp fresh lime juice , 1 tbsp sweet chilli sauce, 1 garlic clove, crushed, 1 tsp finely grated fresh ginger, 1/2 tsp fish sauce.

Ingredients:

  • 4 pork loin medallions 
  • Olive oil spray 
  • 1/2 pineapple, peeled, cored, halved lengthways, thinly sliced 
  • 200g grape tomatoes, halved lengthways 
  • 2 Lebanese cucumbers, peeled, halved lengthways, thinly sliced 
  • 80g watercress sprigs 
  • 2/3 cup fresh coriander sprigs 
  • 2 tbsp fresh lime juice 
  • 1 tbsp sweet chilli sauce 
  • 1 garlic clove, crushed 
  • 1 tsp finely grated fresh ginger 
  • 1/2 tsp fish sauce 

Instructions

  1. Preheat a frying pan over medium heat. Spray the pork with olive oil spray and season with salt and pepper. Add pork to the pan and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 3 minutes to rest.
  2. Meanwhile, to make the dressing, combine the lime juice, sweet chilli sauce, garlic, ginger and fish sauce in a small bowl.
  3. Thinly slice the pork across the grain. Place the pork, pineapple, tomato, cucumber, watercress and coriander in a large bowl. Drizzle over the dressing and toss to combine. Divide among serving bowls and serve.
