To make this dish at home by prescription from the author sheff would need: 1 1/2 tbsp olive oil, 1.2kg piece pork scotch, 1 large red onion, chopped, 2 garlic cloves, thinly sliced, 1 tbsp ground cumin , 2 tsp ground coriander, 3 tsp smoked paprika, 1 tsp hot chilli powder , 1 tsp ground cinnamon, 1/4 tsp ground cloves, 2 x 400g cans chopped tomatoes, 2 red capsicums, chopped.

Ingredients:

  • 1 1/2 tbsp olive oil 
  • 1.2kg piece pork scotch 
  • 1 large red onion, chopped 
  • 2 garlic cloves, thinly sliced 
  • 1 tbsp ground cumin 
  • 2 tsp ground coriander 
  • 3 tsp smoked paprika 
  • 1 tsp hot chilli powder 
  • 1 tsp ground cinnamon 
  • 1/4 tsp ground cloves 
  • 2 x 400g cans chopped tomatoes 
  • 2 red capsicums, chopped 

Instructions

  1. Heat 1 tablespoon oil in a large flameproof, heavy-based casserole dish over medium-high heat. Cook pork, turning, for 5 to 7 minutes or until browned all over. Transfer to a plate.
  2. Heat remaining oil in dish. Add onion. Cook, stirring, for 5 minutes or until softened. Add garlic, cumin, coriander, paprika, chilli powder, cinnamon and cloves. Cook, stirring, for 1 minute or until fragrant. Add tomatoes and 1 cup cold water. Bring to the boil.
  3. Return pork and any juices to dish. Cover. Reduce heat to low. Simmer for 2 hours, turning pork halfway during cooking. Add capsicum. Simmer for a further 1 1/2 hours, turning pork halfway during cooking, or until pork is tender and sauce is thick. Remove from heat.
  4. Carefully lift pork from sauce and transfer to a board. Using 2 forks, shred pork. Return pork to sauce. Return to heat. Simmer, uncovered, for 30 minutes. Season with salt and pepper. Serve.
