Ingredients:
- 2 pork fillets
- Olive oil spray
- 60g butter
- 2 tbsp honey
- 3 pink lady apples, cored and sliced
- Pinch ground cinnamon
- 2 x 425g container sweet potato mash
- 150g bag baby spinach leaves
Instructions
- Preheat oven to 220°C. Spray the pork with oil. Heat flame and ovenproof roasting pan over medium-high heat. Cook pork for 3-4 mins, turning often, until browned. Transfer pan to oven for 10-15 mins until just cooked. Cover in foil.
- Meanwhile, melt butter and honey in a non-stick frying pan over medium heat. Add apples and cook, turning often, for 10-12 mins or until very tender. Sprinkle over cinnamon.
- Heat mash as per packet instructions. Place spinach in a shallow microwave-safe dish. Cover, cook on High/100% for 1-2 mins or until wilted.
- Slice pork. Divide mash among serving plates. Top with pork and apples. Serve with spinach.
