Marinated pork chops with fresh nectarine salsa

This nectarine salsa adds great colour and flavour to pork chops.

To make this dish at home by prescription from the author sheff would need: 160g pkt Masterfoods homestyle mediterranean marinade, 4 pork loin chops, Steamed green beans and SunRice White Medium Grain Rice, to serve, 1/2 small red onion, finely chopped, 2 tbsp mint, chopped , 3 tsp white balsamic vinegar, 2 tsp olive oil, 3 nectarines, diced .

Ingredients:

  • 160g pkt Masterfoods homestyle mediterranean marinade 
  • 4 pork loin chops 
  • Steamed green beans and SunRice White Medium Grain Rice, to serve 
  • 1/2 small red onion, finely chopped 
  • 2 tbsp mint, chopped 
  • 3 tsp white balsamic vinegar 
  • 2 tsp olive oil 
  • 3 nectarines, diced 

Instructions

  1. Lay the chops out on a plate and coat both sides with the marinade. Stand for 10 mins.
  2. Cook pork chops in a lightly oiled, large non-stick frying pan for 4 mins each side. Rest for 5 mins.
  3. To make the Salsa: Combine the nectarines, onion, mint, vinegar and oil in a bowl.
  4. Serve the chops with the salsa, green beans and steamed rice.
